Hello - I sometimes can get the images to stack correctly - and other times I can't - in this current example, ideally I could add a divider after the first set of items so that the remaining for can line up in a row below the other items.
So. 1. is there a way to add a divider
2. How do I avoid having empty spots in the grid of images?

The first option is not possible actually, or needs to be custom coded.
The second question, yes that it possible to align the items based on free gaps, just check this option "Masonry Mode Gallery":
