We wonder if we can do this per categorie?

can we do it for the categories as well without rearranging the shop or other categories?

The order of items is handled globally with this plugin:
https://wordpress.org/plugins/post-types-order/
The order of items individually in each term taxonomy is not possible, you can only order the taxonomy (product categories) order with this plugin:
https://wordpress.org/plugins/taxonomy-terms-order/
