I'm trying to change the colour of the cart icon on the header cart ribbon. I've created an icon in the colour that I want. The only way I can get the theme to use my icon is by copying tpls\cart-ribbon.php into my child theme and modifying the icon paths. Is this the only way to do it / correct way to do it or have I missed something?

You can't change the color, you can just replace this file:
with a new one, and it will be changed as it is not a SVG image but a PNG.
