How do I delete fields from the checkout form?

I have tried various plugins and .php in functions to remove fields from the billing and shipping details but nothing works.

For billing details the only fields I want are: First name, last name, email.

For shipping details the only fields I want are: Town, Suburb, Street No, Street Name, Building details, First name, last name.
