To translate theme strings, you can do this via Loco Translate plugin. If you don't have this plugin, please install and activate it in your WordPress site.

If you have saved your translations inside theme folder, always save a backup of *languages/* folder (inside the theme) when there is new theme update. After you update the theme (languages folder will be replaced with an empty folder), just move the backup files you previously saved to the same languages directory and your changes will still be applied.
1. How can I order the categories of the portfolio as I want? I think they are order by date, I don't want this.
2. The contact form is connected with the email of the super admin of wordpress. Could it be connected with other email account? I am the web developer (admin), and I want to create another admin for my client. Is possible to connect the contact form with this second email?
3. In the case of the portfolio page > url rewrite options.
What happens with the two languages I have done the webpage? Is possible to rewrite the urls in spanish and also en basque? I hope it is, because it's very important. (Menu and cerrar menu could be a small problem, although I think that you should give the chance to translate it)

5. When you enable sticky description in portfolio item, the title of the portfolio doesn't see as it should, when you scroll down in the page. The title has not enough margin and the borders cut it, as you can see in the capture.
How can I change this in the css? I have seen that if I change the margin in .single-potfolio-holder .title h1 it could be a solution, but then the margin before scroll down changes also, and I don't want it.
Please tell me how can I change it to show it properly.

1— Ordering the categories in the Filter of Portfolio Items cannot be done directly through WordPress or the Theme Options, you can do it by using a plugin named Category Order and Taxonomy Terms Order, then you an simply Drag and Drop the categories of Portfolio that will appear in the Portfolio Filter.
2— That can be changed when adding/editing the contact form, see screenshot where you need to type the receiver e-mail:

I have installed Loco Translation and translate All and Next and Previous project in spanish www.bi-tarteinteriorismo.com and basque www.bi-tarteinteriorismo.com/eu
But where can I translate Menu and Cerrar Menu? It doesn't appear in Loco translation, and either in WPML

That part can't be translated. You can edit this only from the Theme Options.

In basque version the style of the text in :hover is different and I haven't change the css for this, because it has been duplicated only.
