Originaly I made a mistake (had no clue at start) - didn't create a child theme....
Somewhere along the road, it seems that I deleted or changed blog page and now I can select it any more. I'm searching for solution how to dispay a blog part, and I came to conclusion, that original Aurum template was good enough. I searched through documentation how to create shortcodes for certain elements.
The settings for the blog and blog post entries are located all in the same location, so if you want to change them go to Laborator > Theme Options > Blog Settings:
As you can see, the ones labeled with single page are for blog posts.
After changing the image size you will have to regenerate each thumbnail to have a new size for an image, but you will also have to note that the image must at least be 350px in height to be cropped or otherwise it wont work. For example in your site only this blog post the image is being cropped properly:
I have installed a plugin (Simple Image Sizes) from where you can manage image sizes all over your site and set the cropping to "Do not crop", so now what you have to do is re-import the same images from your computer to your site. If you want to see an image which is not cropped you can check out this test post:

And that is because the image hieght is bigger than 350px
