Categories and tags do not show by default in Pages, they show in posts and other post types such as products or portfolio but not on pages, and they never did by default.

I could have sworn it was there. I remember typing in a tag I created. Well, then how would I add a tag to a page so it can go in a post grid that I created? I've done this in the past somehow. I do have this Taxonomy Terms Order plugin. I'm not sure if that has anything to do with it.

As far as I know WordPress pages never had categories and tags so maybe there was a plugin which you've been using, I searched and found out this article which explains how to enable this feature for pages. You will have to install a plugin which has not been updated since a long time but make sure you scroll down to the comments section to see how you can install this plugin and enable tags and categories for pages.
