Just replacing the images and text on the demo blog post "Fashions fade, style is eternal", and am not seeing how to change the large image that starts off the post (on the demo it's a photo of a bridge)

I was looking for that kind of 'replace featured image' as exists in places like the portfolio, but your layout with that featured image at right does not appear in my parameters section. See attached.

Thanks, turns out my problem was that I didn't have 'Block Settings' turned on so that panel was invisible.
