The categories are manually set and are not dynamic, just let me know how many categories do you want to show and I will manually edit them and try to align them to the center. Regarding the second question, can you please let me know more about your question as I could not understand what do you want to achieve.

1.  Add this to Custom CSS:

.woocommerce .shop-categories .product-category a {
    white-space: normal;
}
.woocommerce .shop-categories .product-category .woocommerce-loop-category__title, .woocommerce .shop-categories .product-category h3{
    line-height: 1.5;
}

2. I can give you a custom code for that for these categories but it can change if you add more or less categories as they won't be dynamic.
