Hello, I have portfolio image lightbox settings to make full screen. What happens when I select 'Enable zoom option' in theme options? I cannot see the result.
Ideally I want to be able to zoom (hover or click?) once user is in full screen lightbox mode.

That's because these settings are for Lightbox type of portfolio only and not for other types, you're currently using the WPBakery type:
