Is it possible to change the layout of the text on the main posts page for the blog. For example is it possible to add the author, or a Read More button. Or place the Category above the Title?

I have built a Post Grid as suggested below and have used the WP Bakery Grid Builder Element to create a template for the layout I require.
Is it possible to add the Animated Eye icon to this element (as available in the Blog Settings)? There is a large selection of icons available to add to this element but I am unable to see the Animated Eye.
Unfortunately the animated eye is available only for blog posts built with the Blog Post element which is a Laborator element, so this cannot be achieved using the Post Grid.

That cannot be done with the blog page options but you can do that only if you build a page with the Post Grid or Post Masonry Grid:
