    Hello. I'd like to be able to organize my photos in the portfolio layout of my website manually. Is this possible? Is there a way to manually alter the times of the files uploaded? 

    I'd like the most important ones at the top, but I'd like to experiment with layout and options. 

    How can I achieve this?

    If I understand your question well you want to manually arrange your portfolio projects order. If that is what you wanted to achieve then please read this article Manual ordering of posts (portfolio/page/products).
