You can't switch the styles. When you install Aurum in your Wordpress installation and you have a clean Wordpress install you can install Jewelry or any other demo that is offered.
You can also reset your Wordpress installation by using this plugin Wordpress Reset (By Matt Martz) and then install demo-content again.
P.S: Your entire pages will be removed when you perform this action.
