1. I checked your site and the portfolio is shown with visible titles underneath the images. If you use thumbnails only with title on hover that will require custom coding to achieve the always visible titles.
2. Portfolio category filter cannot have it's sub-categories always visible as each category may have sub-categories and you won't know which subcategory is assigned to which parent category.

I've added some custom CSS to make the titles and description show on your portfolio, like in our fitness page even though this is a customization request. Regarding the second question about accordion, the problem was on your Custom CSS on that portfolio item, now I have removed it and it looks normal.
