Do you guys have any recommendations for gift wrapping option during checkout? Would very much like this option, but lots of plugins seem to interfere with themes and generally not work very well.

Sorry but WooCommerce doesn't have this option enabled by default.
Maybe this plugin can help you to achieve what you are asking WooCommerce Checkout Manager.
