From category page, when we enter a product, the previous/next buttons are not working correctly.
The next button in most cases is not working and the previous button show some random product from the category and not the previous shown at category page.
When we finally go to the previous product, the next product is not the one that we came from.
You can't manage that on the category, you can even install a plugin that would rearrange your products but it would only be active for the main shop page while on categories they can't be rearranged. Only if you set the ordering not alphabetically in WooCommerce settings and then it will be normal by clicking next/previous. This is how WooCommerce sorts it's own products.
The next/previous buttons will work on upon the default ordering, if you override it manually through a product then it will be possible too but if you switch the view to alphabetical order then the prev/next won't recognize it as a form of ordering, I hope that I was clear about this.

But the sorting is not alphabetically, it based on standard sorting using a sorting plugin as you mentioned. This works in category pages too.
Maybe previous/next woocommerce sorts products using product id?
