I can add this to our todo list, however it will take a while because we are planing some other changes and also the new WooCommerce version is going to have quite big changes thus we need to focus on these items.

Not having this is a big hole in your theme.
It's client expectation these days for emails to be stored in the DB.
Reason: when an email gets lost or deleted there is always a copy in the DB.
I think this is something that should be a high priority in your next theme updates.

Please do it would be nice to see the form use Gravity Forms or similar so that there is more control.
I see people have been asking to be to add and remove fields too.
